Take A Bite Food Truck

So here is a little background about the truck. The original truck has been an operating food truck in Ontario for the past 20 years. First time was near Sudbury along the highway and then in Hamilton under the Skyway bridge. I purchased the truck last year as a birthday gift for my wife so she could start a business. She loves people and loves to cook for them when she gets the chance. There was a significant amount of cash spent to bring the truck up to code but two days before we were to open, our local Municipality would not let us. The exact words were “Uh, Yah, were not going to let that happen”. Work was stopped on the truck as the funds had run out. We were told that we were basically a restaurant and needed to put in a building and washrooms because the truck had no engine. There were several back and forth emails and a memorable meeting with the local Municipality, it became clear they would not let us open at all last summer, regardless of the reason. It was a shame because we had several other people looking forward to this as we were going to create four jobs in our community and partner with a local rural market. Not to be discouraged, we thought about our options and decided to pursue a different direction. The operation has been turned into a Mobile Food Preparation Premises (Health code wording) and will be ready for inspection in April 2015. We have moved forward with a website (www.Take-A-Bite.ca) to be launched in April and have teamed up with many local businesses and suppliers to promote a “Buy Local” philosophy. Whenever possible we will use local ingredients and products from sustainable operations. If you are going to do something, then do it right! In order to fit everything we needed on the truck we purchased a heavy duty trailer and loaded the truck onto the trailer. The axels’ were removed and the truck body was welded to the trailer. The interior of the truck was gutted and we began again. During this process we decided to add a smoker to the back of the truck, it just seemed to be the right thing to do. The work on the truck is progressing over the winter and once complete we will have a unique mobile kitchen that will have its own water and power supply. This means we can go anywhere and serve up our collection of fine Mediterranean delights, low and slow smoked BBQ, Mac’s Fish & Chips and the most amazing burgers, dogs, homemade sausages and much more. So this is a little bit about our journey, after all it is not the destination but the journey that is important. We appreciate all the support we have received from our family and friends.
