L'idée du nom "Le Café du Bistrot" à été le résultat, tout comme un bordeaux, d'un assemblage. Avant l'ère du Café du Bistrot, existait un petit resto connu sous le nom du "Café Valençay". Son histoire fut pour moi une source d'inspiration. C'est la raison pour laquelle j'ai décidé de conserver le mot café pour mon restaurant. Le Café du Bistrot signifie pour moi, le Café du marchand de vin, car "Bistrot" écrit avec un "T" peut signifier marchand de vin. De plus le nom "Bistro" était important pour moi, car il est l'héritage de mon ancienne association de mon premier restaurant. C'est pourquoi dans le menu vous verrez souvent apparaître les mots bistrot et marchand.
