|| About Double Barrel Foods || Since the day the doors of the Double Barrel Kitchen opened in 2012, a steady stream of Halifax's finest jerky has been making it's way into the hands of Haligonians. DB prides itself on quality and refuses to let anything but the best end up in the customers hands. A unique aspect of DB is the "custom kitchen" option where (for a fee) customers can order any flavor they desire. This feature appeals to those on strict nutrition regimes (i.e. Paleo) or folks who just want something unique. Double Barrel Jerky is prepared using only 100% Atlantic sourced beef from Prince Edward Island. Each batch of jerky is hand cut with a really sharp knife; no machine cutting is employed. This technique allows for removal of most of the fat from the meat and results in a leaner product. The hand-cutting technique also results in a wide variance in the grain direction of the jerky which means that each piece is unique resulting in a more enjoyable chewing experience. All jerky is made to order without using nitrite as a preservative. Not only does this improve the health aspect of the food, it ensures that each batch ordered is fresh and delicious. Many of the marinades used are gluten free and others can be customized to reduce salt & sugar levels. Making jerky is an ancient meat preservation technique that humans have been employing for years. Back before the advent of refrigeration, it was essential that meat be preserved this way or it would go to waste.
